This is wonderful! Thank you for taking the time to dive deep into the most beautiful food in the world. We buy two types each year after the production cycle: Umbrian from my friend with a fattoria near Assisi and Ligurian from the Taggia valley. Just pouring thin ribbons of either over our food makes me happy.
